Nowadays markets are flooded with a wide range of Easter baskets to suit all tastes and pockets. These either come pre-filled with lip smacking goodies or empty for us to fill. Apple cookies
Ingredients:
2 eggs
1/4 c milk
2 c flour
1 tsp soda
1/3 c brown sugar
1/2 c shortening
1/2 tsp salt
1 tsp cinnamon
1 tsp cloves
1/2 tsp nutmeg
1 c nuts
1 c apples, chopped
1 c raisins
Method: First, sieve the dry ingredients. Then blend together the shortening, sugar and beaten eggs. Mix the dry ingredients and the sugar paste. Then add raisins, nuts, apples and milk. Drop by teaspoon on greased cookie sheet and bake at 400 degrees until edges of cookies are golden brown. Remove to rack to cool. Serve these cookies when they are chilled.
Congo cookies
Ingredients:
2 1/3 tsp baking powder
Chocolate chips
2/3 c butter
1/2 tsp salt
1 16-oz brown sugar
3 eggs
1 tsp vanilla
2 c flour
1 c ground nut meats
Method: First, melt butter and then add sugar. Let the molten butter cool. Then add remaining ingredients. Then add the mixture into a long greased cake pan. Bake at 325 degrees for 30 minutes.
